So, you take your slice — should be about a sixth of the apple — and cut a thin V-shape into the end of it like this. Real light, you wanna cut just a little below the skin here.

Then you cut under the skin from the back forward, ending right about even with the point of the V. Not directly under the skin, though; you wanna keep a little layer of apple under there so it's sturdy enough to keep its shape.
And finally you come back and remove that little V-triangle you cut before. Might need to re-cut along the line with the tip of your knife if it's not deep enough.
